FERMA Restaurant is a long awaited project by the chef Māris Astičs – and also his debut as a restaurateur. Māris’ cooking style could be described as simple yet inspiringly sophisticated, fresh and original cuisine centred around a deep respect for the Latvian culinary heritage. Māris believes that the best food is born in forests, vegetable beds and farms. The real source of genuinely enjoyable flavours are top quality local ingredients that can be found in every plate of dish placed in front of the FERMA Restaurant guests.

Elegant and cosy atmosphere

FERMA restaurant is located in the quiet center facing Viesturdarzs, naturally blending into the elegant and cozy atmosphere typical of this part of Riga. The restaurant's terrace, where exquisite dishes are prepared over a live fire in a real smokehouse, surrounds you with a sense of peace on both sunny days and warm summer evenings. Meanwhile, the indoor fireplace and carefully selected drinks make you feel cozy and warm, even on the coldest winter afternoons.

The spirit of modernism

The interior of FERMA restaurant is a prime example of design, crafted by artists Aleksandrs Vasilenko and Stepans Boldirevs. They have combined the functional modernism of the mid-20th century with elegant Art Deco accents. The practical yet aesthetic interior is designed to enhance and extend the guests' enjoyment during their time in the restaurant.

Sustainability in our kitchen

Chef Nils Ģēvele leads FERMA restaurant with a clear commitment to sustainable practices. We believe that every ingredient has value, so we make the most of each one to reduce food waste—what can be served on the plate is not wasted. We have also implemented other sustainability practices in our kitchen, including serving some dishes on plates given a “second life” in our restaurant. Our kitchen workflow is carefully organized: we sort waste and transform it into resources, keeping our planet and the well-being of future generations in mind with every step we take.

Viņi visi ir arī pasniedzēji Māra vadītajā Restorānu servisa skolā, Latvijas ietekmīgākajā kulināru un apkalpojošā personāla kalvē. This recognition confirms our ability to offer an exceptional gastronomic experience and is the result of our entire team’s joint effort! Our chefs, who surprise guests with delicious and artfully presented dishes; our waitstaff, who maintain a positive attitude and serve each guest with a smile; and our bartenders, who carefully pair every dish with the perfect drink – all deserve praise, along with the rest of the team, whose support is invaluable every day.

Māris Astičs

Māris, a chef since the age of 23, has built his career with remarkable determination and passion. By 25, he was the owner of Latvia’s first private cooking school, and by 29, he had opened his own restaurant. These accomplishments reflect his professionalism and his ability to inspire others who appreciate his vision and dedication.

 

Māris has been managing FERMA restaurant for over eight years, believing that the true heart of the restaurant is the team. He surrounds himself with people who embody the same courage he needed to pursue the seemingly impossible. Together with like-minded professionals, Māris creates a unique gastronomic experience that enchants gourmets and elevates FERMA to a high culinary level.

Nils Ģēvele

Nils has been the head chef of FERMA restaurant since 2022, and during this time, he has proven himself to be an excellent professional. Cooking is more than just a profession for Nils – it’s his passion and a way of expressing himself and communicating with the world. Our chef carefully selects high-quality ingredients, respecting each one, and creates dishes that consistently surprise with their excellent taste and rich texture. Nils not only ensures perfect and sustainable kitchen organization but also inspires and motivates his team.

 

Nils is the only chef in Latvia to reach the finals of the world’s most prestigious culinary competition, the BOCUSE D'OR. This achievement showcases his skill and creativity and inspires our team to develop and offer even more exciting culinary adventures for our guests.

 

Some of Nils's prestigious awards include:

    - MICHELIN Guide "Young Chef Award," recognizing his excellence as a young chef,
    - Honoree of “Latvian Chef 2022.”

Pastry chef

Valērija Čudova

Valērija’s positive energy is evident in both her professional work and the team atmosphere. She believes that the emotions experienced during cooking are transferred to the plate, allowing each guest to feel a dose of positivity through her dishes. Valērija successfully balances dessert preparation at FERMA restaurant with her role as a lecturer at the Restaurant Service School, where she conducts culinary seminars and practical classes.

 

Valerija has received the following prestigious awards:

    - Honoree of “Latvian Chef 2023”,
    - 1st place in the “Culinary Star” category in the grant competition organized by Gemoss.


Additionally, she has honed her skills at the Michelin-starred restaurant Nolla in Helsinki, Finland.

 

Restaurant Manager

Jānis Viļumovs

Jānis is the manager of FERMA restaurant, whose heart beats in sync with his team. Like a captain who knows every detail of his ship, Jānis began his journey working as both a waiter and a bartender, therefore he understands every detail that can be encountered in the daily life of the restaurant. This experience allows him to stay one step ahead, anticipating the needs of both guests and the team.

 

FERMA is the ninth restaurant that Jānis has managed, but, as he says, this one is special. FERMA feels like a second home to him – a place where he enjoys creating an atmosphere where everyone feels welcome and valued.

Bartender

Alvins Matisāns

Anyone can be a mediocre bartender, but it takes true creativity to become an excellent one. Alvins realized this early in his career, and his confidence has only strengthened over time. He believes guests seek “their” bartender to feel understood, and this mutual understanding is an art he refines with each new cocktail. His greatest satisfaction comes from hearing stories of guests returning specifically to order one of his signature drinks, with requests for the “FERMA Alvins’s cocktail" are becoming more and more frequent.
